Banana Bread (gluten-free)

Yield: 1 loaf
Enjoy this with a slice of mild-flavoured cheese.

1¹⁄³ cups GEMS flour
¹⁄³ cup chocolate chips
¹⁄³ cup granulated sugar
1 Tbsp baking powder
½ tsp guar gum
½ tsp salt
1 cup mashed ripe banana (2 large)
²⁄³ cup milk
¼ cup vegetable oil

1. Preheat oven to 350°F. Lightly grease 8×4-inch loaf pan.

2. In mixing bowl combine GEMS flour, chocolate chips, sugar, baking powder, guar gum and salt.

3. In separate bowl blend the banana, milk and oil.

4. Pour wet mixture into centre of dry ingredients and lightly mix to blend.

5. Spoon batter into prepared pan. Bake until loaf is springy to touch or toothpick inserted in centre comes out clean, about 35 to 40 minutes.

6. Cool on rack 10 minutes before turning out of pan.
