Chai Latte

Here’s my version of a chai latte. Enjoy either hot or chill and serve over ice!

1 thin slice of fresh ginger
2 whole cloves
1 tsp ground cardamom
1 tsp ground nutmeg
¼ tsp pure vanilla
3 sticks of cinnamon, broken in half
1 cup milk (feel free to substitute soy or almond milk)
4 tea bags (black tea)
honey (to taste)

Combine milk, ginger, cloves, cardamom, nutmeg, vanilla, and cinnamon in a medium sized saucepan. Bring to a gentle boil over medium heat, stirring frequently. Remove from heat and cover, letting mixture steep for 15 minutes.

While the milk mixture steeps, bring water to a boil. Combine 2 cups of boiling water with tea bags and steep for approximately 4 minutes.

Strain the milk mixture and add the hot tea, discarding tea bags. Put 1 tbsp of honey (or to taste) into a mug and pour chai on top. Stir and enjoy warm. Alternatively you can chill the chai and pour over ice for a more summer appropriate option!
