This recipe is a favorite with guests at the Tuwanek Hotel. The whipped cream topping takes the place of milk and makes for an elegant starter for two.
Granola:
1⁄2 cup favorite granola
1⁄4 cup slivered almonds, toasted
1⁄4 cup chopped dates or dried apricots
2 Tbsp dried cranberries
1⁄2 ripe pear, diced
1⁄4 cup chopped red grapes
fresh mint leaves (optional)
Honey Mascarpone:
1⁄4 cup whipping cream
1 Tbsp honey
1 Tbsp mascarpone cheese
1. In a medium bowl, combine the granola, almonds, dates, cranberries, pear, and grapes.
2. Lightly whip the cream in a small bowl. Add the honey and mascarpone cheese; continue whipping until creamy and smooth.
3. Serve granola in individual bowls topped with a generous dollop of Honey Mascarpone. Garnish with mint leaves.
