Stay-At-Home-Chef’s Banana Bread

2 cups flour
1 ½ tsp baking soda
½ tsp salt
4 ripe bananas
1 cup sugar
¾ cup (1 ½ sticks) melted butter
2 large eggs
1 tsp vanilla
½ cup pecans (or walnuts)

Preheat oven to 350 degrees F and grease bread pan with butter.

In a large bowl, combine the flour, baking soda and salt. Roughly mash ½ the bananas with a fork in a small bowl so they still have some texture and set aside. In a large bowl, whip the remaining bananas and sugar for 3 minutes until light and fluffy. Add the butter, eggs and vanilla. Beat well. Mix in dry ingredients (don’t over mix). Fold in nuts and mashed bananas and pour into pan. Rap the pan on the counter to get rid of any air.

Bake for 1 hour and 15 minutes.
