I actually hate the no mistakes allowed and no room for improvisation nature of baking. These treats are my version of how to “bake” and fool your kids into thinking you slaved in the kitchen all day.
Chinese Peanut Butter Cookies
1 package butterscotch chips
½ cup peanut butter
1 bag of those crispy, yellow Chinese noodles
1/2 a package of mini marshmallows
Melt the butterscotch chips in a big sauce pan and remove the pan from the heat. Quickly stir in the peanut butter and marshmallows until the whole mess is liquid-y.
Add the noodles and stir until they are well coated. Drop bite size bits from a large spoon onto a baking sheet lined in parchment paper. Refrigerate for as long as you can hold out.
Serve and be prepared to have the kids fight over them. And I mean really fight – with blows – not just an argument.
