My Christmas Tradition? Eggnog! I love eggnog and will take it in any form I can get – latte, cheesecake, over ice with rum or Baileys and in cookie form too. Did I mention that I happen to LOVE eggnog?! Each Christmas I experiment with a new eggnog baking recipe, and this year I am excited to see what trouble I can get into playing with eggnog extract. Can’t wait!
Here is a simple eggnog recipe I have used in the past. These cookies are easy and light with a hint of eggnog flavour. Happy Holidays – have a cup of eggnog cheer!
Eggnog Cookies
2 ½ cups of flour
1 tsp baking powder
½ tsp cinnamon
½ tsp and 1 Tbsp ground nutmeg
1 ¼ cup sugar
¾ cup butter, softened
½ cup eggnog
1 tsp pure vanilla extract
2 large egg yolks
Preheat oven to 300 Degrees F.
In medium bowl combine flour, baking powder, cinnamon and ½ tsp of nutmeg. Mix well with wire whisk – set aside.
In large bowl cream sugar and butter with electric mixer to form grainy paste. Add eggnog, vanilla and egg yolks.
Add the flour mixture to eggnog mixture and beat at low speed until just combined; do not over mix.
Drop rounded teaspoonfuls onto ungreased baking sheets, approximately 1-inch apart. Sprinkle lightly with the remaining 1 Tbsp of nutmeg.
Bake for 23-25 min or until bottoms turn light brown. Immediately transfer to cool, flat surface with spatula.
