Butterscotch Chip Cookies

This is such a tasty and versatile recipe! Have fun switching up the cake mix (e.g. chocolate fudge mix with added chocolate chips and walnuts).

1 pkg. Butter Pecan cake mix
2 eggs
1 tsp vanilla
1 cup butterscotch chips
½ cup chopped pecans
½ cup butter, melted
¼ cup dark brown sugar, firmly packed

Preheat oven to 350 degrees F.

Sift cake mix into bowl to get any lumps out. Add eggs, melted butter, sugar and vanilla. Stir with a fork until thoroughly blended. Stir in chocolate chips and nuts. Drop by tbsp onto greased baking sheet or stone pan.

Bake for 10 – 12 minutes.
