Recipe courtesy of Jacqueline Twa
2 cups flour
1 tsp salt
1 cup shortening (do I dare say lard works best?)
1/2 cup cold water
Combine flour and salt in a big bowl. Cut in the cold shortening until mixture is coarse and crumbly. Add water until mixture forms a ball.
Cut the dough in half and roll into 2 balls. Cover dough with plastic wrap and let rest in the refrigerator for at least a couple of hours or overnight.
Roll out dough on a floured surface when you are ready to use. Try not to work it too much or it will become tough.
